The 2019 Albany Summer School welcomes Executive Chef Frederick Kirby

Executive Chef, Frederick Kirby, has extensive experience within Europe & Australia, having trained and worked at several Michelin Starred Restaurants, along with exclusive 5 Star Hotels in Ireland including The Merion and Fitzwilliam Hotels in Dublin, Sheen Falls Lodge in Kenmare and the K Club Golf Resort (host of the world famous ‘Ryder Cup’). Upon migrating to Perth, Western Australia in 2005, Frederick commenced work at ‘C’ Restaurant, the ‘Revolving Restaurant in the Sky’, Perth. This was followed by accepting the role of Executive Chef of RiverBank Estate Winery and then as Executive Chef at Sandalford’s Winery in the Swan Valley. In early 2012, Frederick visited Denmark, Western Australia with his family and this wonderful visit lead to the Kirbys making a huge life change and relocating their family and business. April of 2013 saw Frederick and Jacqueline make the big move to Denmark and announce the opening of ‘Kirby’s at Rickety Gate’ Cooking School, Fine Dining Restaurant + Wedding Venue located at Rickety Gate Estate. August of 2017 saw the closing of his restaurant so that he could focus on the needs of his beautiful, autistic, non-verbal son Hamish, along with offering services as caterers for weddings & events across The Great Southern.
Frederick’s philosophy towards food is to keep it fresh, keep it simple and simply cook with the basics to enhance and enrich the natural flavours.
In this hands-on class Frederick Kirby will teach students to perfect a selection of fresh breads and an array of pastry items that will tempt your friends and family over brunch.
